Seared Ahi Tuna - shredded Napa cabbage, carrots, jicama and cilantro, tossed in a lemon ginger sesame glaze
Sea Bass Cake - pan-seared flaky sea bass cake served on Cajun slaw and drizzled with chipotle aioli
*Baked Eggplant Napoleon - sliced and baked eggplant layered with fresh mozzarella, basil leaves and topped with tomato, carrot ragout
*Mozzarella Caprese - sliced fresh mozzarella, beefsteak tomatoes and basil, drizzled with olive oil and balsamic reduction
Poached Pear and Prosciutto Salad - mixed greens topped with poached sliced pears, toasted walnuts, gorgonzola and raspberry vinaigrette

Sautéed Chilean Sea Bass - pan-seared Chilean sea bass filet served with braised fennel, potato gratin, chives and lobster sauce
Pan Seared Duck Breast - duck breast served with couscous, raisins, mixed baby vegetables and wild berry Port wine reduction
Black Angus Filet Mignon and Grilled Prawns - pan-seared black angus beef tenderloin filet served with grilled tiger prawns, asparagus, mashed potatoes and roasted shallot sauce
Roasted Pork Tenderloin - marinated and roasted pork tenderloin with potato gratin, caramelized onions, apple cider demi reduction
